  • 700g carrots
  • 2 tins black beans
  • 1 red onion
  • 1 red pepper
  • 120g baby spinach
  • 2 tsp smoked paprika
  • 1 tsp ground cinnamon
  • 1 lime
  • 2 tbsp olive oil

  1. Step 1

    Prepare the hash

    Dice the carrots, finely slice the red onion, dice the red pepper, drain and rinse the black beans if tinned, and cut the lime into wedges.

    Start the base

    Heat olive oil in a wide frying pan. Fry the carrots for 8 to 10 minutes, stirring often, until golden at the edges and almost tender.

    Add vegetables and spice

    Add the red onion and red pepper with salt. Cook for 5 minutes, then stir in smoked paprika and ground cinnamon for 1 minute.

    Add the protein

    Fold in the black beans and cook for 4 to 5 minutes until hot through and lightly crisp in places.

    Wilt and serve

    Fold through the baby spinach for 1 to 2 minutes until just wilted. Squeeze over lime juice and serve in warm bowls.
