  • 6 pitta breads
  • 250g Greek yoghurt
  • 1 cucumber
  • 250g cherry tomatoes
  • 2 little gem lettuce
  • 1 red onion
  • 1 lemon
  • 2 cloves garlic
  • 2 tsp dried oregano
  • 2 tbsp olive oil

    Prep the chicken and salad

    Slice the chicken into thin strips. Halve the tomatoes, shred the lettuce, thinly slice the red onion, grate half the cucumber, dice the remaining cucumber, grate the garlic, and cut the lemon in half.

    Season the chicken

    Toss the chicken with 1 tablespoon olive oil, the oregano, half the garlic, lemon zest, juice from half the lemon, and a pinch of salt and pepper.

    Cook the chicken

    Heat a large frying pan over a medium-high heat. Cook the chicken for 6-8 minutes, turning often, until golden at the edges and piping hot through the thickest pieces.

    Make the tzatziki

    Squeeze excess water from the grated cucumber, then mix it with the Greek yoghurt, remaining garlic, juice from the remaining lemon half, 1 tablespoon olive oil, and a pinch of salt.

    Warm the pittas

    Warm the pittas in a toaster or dry pan for 1-2 minutes until soft and lightly puffed. Cut each one into halves or wedges.

    Build the boxes

    Divide the lettuce, tomatoes, diced cucumber, red onion, chicken, pittas, and tzatziki between plates or lunch boxes. Spoon any resting juices from the chicken over the top.
