Ingredients

Method

Finely zest the lime, then juice half of it. Dice the banana and mango, keeping a small handful of mango back for topping.

Stir the porridge oats, oat milk, chia seeds, maple syrup, cinnamon, lime zest, and lime juice in a large bowl until the oats are fully moistened.

Fold most of the mango and all the diced banana through the oat mixture for 1 minute. Spoon into four pots, cover, and chill for at least 4 hours or overnight until thick.

Stir each pot once, loosen with a splash more oat milk if needed, then top with the reserved mango and pumpkin seeds.
