  • 1 red pepper
  • 120g spinach
  • 1 onion
  • 3 cloves garlic
  • 15g fresh coriander
  • 1 tbsp olive oil

  • 1 tsp ground cumin
  • 1/2 tsp black pepper

    Drain and rinse the butter beans. Finely chop the onion, dice the red pepper, grate the garlic, roughly chop the coriander stalks and leaves separately, and wash the spinach.

    Heat 1 tablespoon olive oil in a wide lidded frying pan over a medium heat. Add the onion, red pepper, coriander stalks, and black pepper, then cook for 5 to 6 minutes until the pepper softens and the onion looks glossy.
