Method

Whisk the chia seeds, coconut milk, 200ml water, vanilla extract and 2 tablespoons maple syrup in a large jug for 1 minute. Leave for 5 minutes, then whisk again so no clumps remain.

Finely grate the lemon zest and squeeze 1 tablespoon juice. Crush 200g raspberries with the lemon juice and remaining 1 tablespoon maple syrup until juicy but still textured.

Divide half the chia mixture between four jars or glasses. Spoon in the crushed raspberries, add the remaining chia mixture, then swirl once with a teaspoon. Cover and chill for at least 4 hours or overnight until thick.

Stone the peaches and cut them into thin wedges. Top each chilled pot with peach, the remaining 100g raspberries, pumpkin seeds and the lemon zest just before serving.
