Warm blueberry and almond baked oats with a softly set middle, fruit through the bake, and a simple honey finish.

Method

Heat the oven to 180C, or 160C fan, and lightly grease a small baking dish.

Rinse the blueberries and roughly chop the almonds, keeping a spoonful of each back for the top.

Whisk the milk, eggs and honey in a bowl until smooth, then stir in the oats so there are no dry patches.

Fold through most of the blueberries and almonds, spoon the mixture into the dish, and scatter the reserved blueberries and almonds over the top.

Bake for 22 to 25 minutes until puffed, set in the middle and lightly golden at the edges, then rest for 5 minutes before serving warm.
