Method

Rinse the rice, then cook it in a saucepan of simmering water for 12 to 15 minutes until tender.

Cut the chicken into bite-sized pieces, chop the broccoli into small florets, finely grate the ginger and garlic, and slice the spring onions.

Heat a non-stick frying pan over a medium-high heat, add the chicken, and cook for 6 to 8 minutes, turning, until golden outside and piping hot in the centre.

Add the broccoli and peas with a splash of water, then cover for 3 minutes until the broccoli is bright green and just tender.

Stir in the ginger, garlic and soy sauce, then cook uncovered for 2 minutes until the sauce turns glossy and coats the chicken.

Drain the rice and let it steam dry for 1 minute.
