Method

Wash and dry the lettuce leaves, halve the cherry tomatoes, and slice the cucumber into bite-sized pieces.

Cut the chicken into bite-sized pieces and toss it with 1 tablespoon of the pesto.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes, turning until golden outside and piping hot in the centre, then cool for 5 minutes if packing lunch.

Divide the lettuce between lunch boxes, keeping the cucumber and tomatoes to one side if packing ahead.

Add the chicken and pesto in even layers so every box has a balanced mix.
Pack the olive oil separately and spoon it over just before eating, then toss for 30 seconds.
