Method

Cook the pasta in boiling water for 9 to 11 minutes until just tender, then drain and rinse under cold water so it does not clump as it cools.

Slice the spinach and halve the cherry tomatoes into bite-sized pieces.

Slice the halloumi and cut the peppers into thin strips.

Cook the halloumi in a dry non-stick frying pan for 2 to 3 minutes on each side until golden, then lift it to a board and slice into strips.

Toss the cooled pasta with the lemon and olive oil for 30 seconds so it is lightly coated.
Fold through the pasta, halloumi and peppers, spinach and cherry tomatoes, then chill or serve at room temperature.
