  • 120g hummus
  • 225g halloumi
  • 2 peppers
  • 1 cucumber
  • 1 lettuce

    Prep the fillings

    Cut the peppers into bite-sized pieces, cut the cucumber into bite-sized pieces and shred the lettuce. Keep the fillings close to hand.

    Griddle the halloumi

    Cook the halloumi in a dry non-stick frying pan for 2-3 minutes on each side until golden, then slice into strips.

    Warm the wraps

    Warm the wraps in a dry frying pan for 30 seconds on each side, or microwave them for 20 seconds, so they fold without tearing.

    Spread the sauce

    Spread hummus over each wrap, leaving a small border around the edge. Add a pinch of salt only if the sauce tastes flat.
