Method

Heat the oven to 200C, or 180C fan, and set out a medium baking dish.

Cook the pasta in boiling water for 8 to 10 minutes until just tender, then drain well.

Finely grate the ginger and garlic, zest half the lemon, and cut the salmon into large chunks.

Warm the passata in a frying pan over a medium heat with the ginger, garlic and lemon zest for 3 to 4 minutes until fragrant.

Stir the drained pasta and spinach into the sauce, then spoon everything into the baking dish and nestle the salmon pieces through the pasta.

Scatter over the cheddar and bake for 15 to 18 minutes until bubbling, golden on top, and the salmon flakes easily.
