Method

Rinse the rice, then cook it in simmering water for 12 to 15 minutes until tender.

Chop the broccoli into small florets, slice the spring onions, and whisk the grated ginger, garlic, soy sauce and honey in a small bowl.

Cut the salmon into large chunks and pat dry so it sears rather than steams.

Heat a non-stick frying pan over a medium heat, add the salmon, and cook for 2 to 3 minutes on each side until golden and just opaque.

Lift the salmon to a plate, add the broccoli and a splash of water to the pan, then cover for 3 minutes until bright green.

Return the salmon with the soy-ginger sauce and bubble for 1 to 2 minutes until glossy and coating the fish.
