Method

Rinse the rice, then cook it in simmering water for 12 to 15 minutes until tender.

Finely chop the onion, grate the carrots, and rinse the red lentils in a sieve until the water runs mostly clear.

Fry the turkey mince in a non-stick pan over a medium-high heat for 7 to 9 minutes, breaking it up until browned and piping hot.

Add the onion and carrots, then cook for 4 minutes until the vegetables soften and the pan smells sweet.

Stir in the red lentils, passata, smoked paprika, soy sauce and 250ml water, then simmer for 12 to 14 minutes until the lentils are tender and the sauce is thick.

Drain the rice and let it steam dry for 1 minute.
