Method

Rinse the rice, then cook it in a saucepan of simmering water for 12 to 15 minutes until tender.

Drain and rinse the kidney beans, slice the spring onions, and cut the lime into wedges.

Fry the beef mince in a non-stick frying pan over a medium-high heat for 7 to 9 minutes, breaking it up with a spoon until browned with no visible pink patches.

Stir in the smoked paprika, kidney beans, peas, soy sauce, and 2 tbsp water, then cook for 3 to 4 minutes until glossy and piping hot.

Drain the rice and let it steam dry for 1 minute, then squeeze a little lime over the beef mixture.

Spoon the rice into bowls, add the smoky beef and beans, and finish with spring onions and extra lime wedges.
