Wash and dry the lettuce, halve the cherry tomatoes, and slice the cucumber into half-moons.

Cut the chicken breast into bite-sized pieces, then chop the roasted vegetables into smaller pieces so they mix through evenly.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until golden outside and piping hot in the centre, then cool slightly before packing.

Whisk the olive oil with 1 tbsp lemon juice in a small bowl or shake it in a lidded pot.

Divide the lettuce between boxes, then layer over the chicken, roasted vegetables, tomatoes, and cucumber.
Pack the dressing separately and toss for 30 seconds just before eating so the salad stays crisp.
