Method

Slice the cucumber into thin batons and shred the lettuce so the wraps roll neatly.

Cut the chicken breast into bite-sized pieces, then chop the roasted vegetables into smaller pieces so they mix through evenly.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until golden outside and piping hot in the centre, then cool slightly before packing.

Warm the wraps in a dry frying pan for 30 seconds on each side, or microwave them for 20 seconds so they fold without tearing.

Spread the hummus over each wrap, leaving a small border around the edge.
Add the chicken, roasted vegetables, cucumber, and lettuce, roll tightly, then slice in half to serve or pack for lunch.
