Method

Rinse the rice, then cook it in a saucepan of simmering water for 12 to 15 minutes until tender.

Deseed and slice the peppers, slice the spring onions, and cut the lime into wedges.

Fry the turkey mince in a non-stick frying pan over a medium-high heat for 7 to 9 minutes, breaking it up until browned with no visible pink patches.

Add the peppers, peas, smoked paprika, soy sauce, and 2 tbsp water, then cook for 4 to 5 minutes until the peppers soften and the sauce looks glossy.

Drain the rice and let it steam dry for 1 minute, then squeeze a little lime over the turkey mixture.

Spoon the rice into bowls, top with turkey and peppers, and finish with spring onions and extra lime wedges.
