Method

Stone and dice the apricots if fresh, then keep a spoonful aside with a few chopped almonds for topping.

Stir the oats, milk, yogurt, chia seeds, and almonds together in a lidded container for 1 minute until evenly mixed.

Fold through most of the apricots, cover, and chill for at least 4 hours or overnight until thick and creamy.
