Method

Heat the oven to 180C and lightly grease a small baking dish.

Rinse the blueberries, zest the lemon, and keep a spoonful of berries aside for topping.

Whisk the eggs, milk, and honey in a bowl for 1 minute, then stir in the oats and lemon zest until no dry patches remain.

Fold through most of the blueberries, spoon the mixture into the dish, and scatter the reserved topping over the surface.

Bake for 20 to 25 minutes until the centre is just set and the edges are lightly golden, then rest for 5 minutes before serving.
