Method

Wash and dry the lettuce, halve the cherry tomatoes, and slice the cucumber into half-moons.

Cut the chicken into bite-sized pieces and keep the Caesar dressing ready for coating after cooking.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until golden outside and piping hot in the centre, then cool slightly before packing.

Whisk the olive oil with 1 tbsp lemon juice in a small bowl or shake it in a lidded pot.

Divide the lettuce between boxes, then layer over the chicken, Caesar dressing, tomatoes, and cucumber.
Pack the dressing separately and toss for 30 seconds just before eating so the salad stays crisp.
