Method

Rinse the rice, then cook it in a saucepan of simmering water for 12 to 15 minutes until tender.

Halve the tomatoes, slice the spring onions, crush the garlic, and cut the chicken into bite-sized pieces.

Cook the chicken in a non-stick frying pan over a medium-high heat for 5 to 6 minutes until golden on the outside with no visible pink patches.

Add the peas, tomatoes, garlic, soy sauce, and 2 tbsp water, then cook for 3 to 4 minutes until the tomatoes soften slightly and the chicken is piping hot.

Drain the rice and let it steam dry for 1 minute, then squeeze a little lime over the chicken mixture.

Spoon the rice into bowls, top with chicken and tomatoes, and finish with spring onions and extra lime wedges.
