Method

Wash and dry the lettuce, halve the cherry tomatoes, and slice the cucumber into half-moons.

Drain the sweetcorn, cut the halloumi into slices, and pat the halloumi dry so it colours in the pan.

Cook the halloumi in a dry non-stick frying pan for 2 to 3 minutes on each side until golden, then cool slightly before packing.

Whisk the olive oil with 1 tbsp lemon juice in a small bowl or shake it in a lidded pot.

Divide the lettuce between boxes, then layer over the halloumi, sweetcorn, tomatoes, and cucumber.
Pack the dressing separately and toss for 30 seconds just before eating so the salad stays crisp.
