Method

Rinse the rice, then cook it in a saucepan of simmering water for 12 to 15 minutes until tender.

Cut the broccoli into small florets, slice the spring onions, and whisk the miso paste with the soy sauce and 3 tbsp hot water.

Cook the salmon in a non-stick frying pan over a medium heat for 3 to 4 minutes on each side until golden outside and just flaking.

Lift the salmon onto a plate, then add the broccoli, peas, and 2 tbsp water to the pan for 3 to 4 minutes until bright green and hot.

Return the salmon to the pan with the miso-soy glaze for 1 minute until glossy, then squeeze over a little lemon juice.

Drain the rice, spoon it into bowls, top with salmon, broccoli, peas, and pan glaze, then finish with spring onions and extra lemon wedges.
