Method

Heat the oven to 180C and lightly grease a small baking dish.

Mash half the banana and slice the rest, keeping a few slices aside for topping.

Whisk the eggs, milk, peanut butter, and honey in a bowl for 1 minute until smooth, then stir in the oats until no dry patches remain.

Fold through most of the banana, spoon the mixture into the baking dish, and scatter the reserved topping over the surface.

Bake for 20 to 25 minutes until the centre is just set and the edges are lightly golden, then rest for 5 minutes before serving.
