Method

Boil water in a kettle or saucepan, then put the couscous in a heatproof bowl, pour over 220ml boiling water, cover, and leave for 5 minutes.

Slice the chicken into bite-sized pieces, deseed and dice the peppers, zest and juice the lemon, and chop the parsley.

Cook the chicken and peppers in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until the chicken is golden and piping hot.

Stir in the piri piri sauce for 1 minute so it coats the chicken without catching on the pan.

Fluff the couscous with a fork for 30 seconds, then stir through the lemon zest, lemon juice, and parsley.
Fold in the piri piri chicken and peppers while warm, then cool slightly and portion into lunch boxes.
