Method

Slice the chicken into bite-sized strips, then toss with 2 tbsp piri piri sauce.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until golden and piping hot in the centre.

Rest the chicken for 5 minutes, then slice it across the grain so it stays juicy.

Halve the tomatoes, slice the cucumber, and divide the salad leaves between lunch boxes.

Whisk the lemon juice with olive oil and the remaining piri piri sauce, then pack the dressing separately if making ahead.
Add the chicken on top and dress just before eating so the leaves stay crisp.
