Method

Slice the cucumber, halve the cherry tomatoes, and keep the salad leaves dry so they stay crisp.

Cut the halloumi into slices and cook in a dry non-stick frying pan for 2 to 3 minutes on each side until golden.

Whisk the pesto with the olive oil and 1 tbsp water to make a spoonable dressing.

Pack the pesto dressing separately and toss for 30 seconds just before eating.
