A tomato-miso salmon pasta bake with spinach and a light cheddar topping for a savoury family dinner.

Method

Heat the oven to 200C, set out a medium baking dish, and bring a saucepan of water to the boil.

Cook the pasta for 8 to 10 minutes until just tender, then drain well and keep back a mug of pasta water.

Roughly chop any large spinach leaves, grate the cheddar if needed, and whisk the miso paste with 4 tbsp hot pasta water until smooth.

Cook the salmon in a non-stick frying pan over a medium heat for 3 to 4 minutes on each side until just opaque on the outside, then flake into large chunks.

Stir the miso mixture into the passata, then fold through the pasta, salmon, and spinach in the baking dish. Add a splash of pasta water if the sauce looks too thick.

Scatter over the cheddar and bake for 15 to 20 minutes until bubbling at the edges, golden on top, and the salmon flakes easily.
