Method

Thinly slice the carrots, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

Heat olive oil in a frying pan. Cook the chicken breast for 6 to 8 minutes, turning until golden at the edges and hot through.

Stir the green pesto with black pepper, 1 tbsp water, and a pinch of salt until spoonable.

Spread the dressing over the wraps, then divide over the chicken breast, carrots, lettuce, and red onion.

Fold in the sides, roll each wrap firmly for 2 minutes, then cut in half and pack seam-side down.
