  • 800g new potatoes
  • 2 red onion
  • 2 tsp medium curry powder
  • 1 lime
  • 1 bunch fresh coriander
  • 2 tbsp olive oil

    Heat the oven to 220C/200C fan/gas 7. Halve the potatoes, cut the sweet potatoes into even pieces, slice the onions, and pat the chicken thigh fillets dry.

    Toss the potatoes, onion, sweet potatoes, medium curry powder, olive oil, and salt on a large roasting tray.
