  • 2 tins chickpeas
  • 8 wholemeal tortilla wraps
  • 250g red pepper
  • 2 little gem lettuce
  • 1 red onion
  • 150g Greek yoghurt
  • 1 tsp smoked paprika
  • 1 tbsp olive oil

    Prepare the vegetables

    Cut the red pepper into thin strips, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

    Drain and rinse the chickpeas, pat them dry, then heat the olive oil in a frying pan and cook for 6 to 8 minutes, turning until golden at the edges and hot through.

    Stir the Greek yoghurt with smoked paprika, olive oil, 1 tbsp water, and a pinch of salt until spoonable.

    Spread the paprika yoghurt over the wraps, then divide over the chickpeas, red pepper, lettuce, and red onion.
