Method

Halve the cherry tomatoes, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

Drain and rinse the chickpeas, pat them dry, then heat the olive oil in a frying pan and cook for 6 to 8 minutes, turning until golden at the edges and hot through.

Squeeze the lime juice into a small bowl, stir in the ground coriander, olive oil, 1 tbsp water, and a pinch of salt until spoonable.

Spoon the lime dressing over the wraps, then divide over the chickpeas, cherry tomatoes, lettuce, and red onion.

Fold in the sides, roll each wrap firmly for 2 minutes, then cut in half and pack seam-side down.
