Method

Heat the oven to 220C/200C fan/gas 7. Halve the potatoes, slice the onions into wedges, roughly chop any large spinach leaves, and break the turkey mince into rough 3cm pieces.

Toss the potatoes, red onion, ground cumin, olive oil, and a pinch of salt on a large roasting tray, spreading everything into an even layer and keeping the spinach aside.

Roast for 18 minutes, turning once, until the potatoes are starting to colour and the onion is softening at the edges.

Nestle the turkey mince pieces into the tray and roast for 12 to 15 minutes until the turkey is cooked through with no pink showing and the potatoes are golden.

Fold the spinach through the hot tray for 1 to 2 minutes until just wilted, then squeeze over the lime and scatter with chopped fresh coriander.

Divide between plates with the cumin pan juices spooned over the top and the crisp potato edges shared out.
