  • 8 wholemeal tortilla wraps
  • 250g cooked beetroot
  • 2 little gem lettuce
  • 1 red onion
  • 1 lime
  • 1 tsp ground coriander
  • 1 tbsp olive oil

    Prepare the vegetables

    Cut the cooked beetroot into thin matchsticks, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board. Hold back extra salt and black pepper until the final taste check.

    Prepare the protein

    Drain the tuna well, tip it into a bowl, and flake it with a fork for 2 minutes so it is ready for the lunch filling.

    Stir the lime juice with ground coriander, olive oil, 1 tbsp water, and a pinch of salt until spoonable.

    Spread the dressing over the wraps, then divide over the tuna, cooked beetroot, lettuce, and red onion.
