Method

Cut the cooked beetroot into thin matchsticks, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

Drain the tuna well, tip it into a bowl, and flake it with a fork for 2 minutes so it is ready for the lunch filling.

Stir the lime juice with ground coriander, olive oil, 1 tbsp water, and a pinch of salt until spoonable.

Spread the dressing over the wraps, then divide over the tuna, cooked beetroot, lettuce, and red onion.

Fold in the sides, roll each wrap firmly for 2 minutes, then cut in half and pack seam-side down.
