  • 2 tins tuna
  • 8 wholemeal tortilla wraps
  • 250g baby spinach
  • 2 little gem lettuce
  • 1 red onion
  • 150g Greek yoghurt
  • 1 tsp smoked paprika
  • 1 tbsp olive oil

    Prepare the vegetables

    Roughly chop any large baby spinach leaves, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

    Drain the tuna well, tip it into a bowl, and flake it with a fork for 2 minutes so it is ready for the lunch filling. Hold back extra salt and black pepper until the final taste check.

    Make the dressing

    Stir the Greek yoghurt with smoked paprika, olive oil, 1 tbsp water, and a pinch of salt until spoonable.

    Fill the wraps

    Spread the dressing over the wraps, then divide over the tuna, baby spinach, lettuce, and red onion.
