Method

Cook the noodles in boiling water for 4-5 minutes, or follow the pack timing, then drain and keep close to the hob.

Cut the pepper into bite-sized pieces and finely slice the spring onions. Keep soy sauce ready. Stir-fries move quickly, so have everything beside the hob.

Heat 1 tablespoon olive oil in a wok or large frying pan over a high heat. Stir-fry the beef strips for 2-4 minutes until browned at the edges and piping hot, then lift onto a plate.

Add pepper and spring onions to the hot pan and stir-fry for 3-4 minutes until glossy and still a little crisp.

Return the beef strips to the pan with the noodles and soy sauce. Toss for 1-2 minutes until everything is coated and piping hot.
Taste before adding extra salt because soy-based sauces are already salty. Finish with black pepper, spring onions, or herbs if listed.
