Method

Cook the noodles in boiling water following the pack timing, then drain well and keep close to the hob.

Slice the peppers into thin strips and finely slice the spring onions, keeping a handful of green tops for serving.

Heat a wok or large frying pan over a high heat and fry the beef strips for 2 to 3 minutes, tossing often, until browned at the edges. Lift onto a plate.

Stir-fry the peppers for 3 to 4 minutes until glossy and just softened, then return the beef to the pan.

Add the noodles, soy sauce, and most of the spring onions. Toss for 1 to 2 minutes until piping hot, then finish with the reserved green tops.
