Method

Heat the oven to 200C and set out a medium baking dish.

Cook the pasta in a saucepan of boiling water for 8 to 10 minutes until just tender, then drain and keep a mug of pasta water nearby.

Cut the chicken into bite-sized pieces, halve the cherry tomatoes, roughly chop any large spinach leaves, and tear the mozzarella.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until golden outside and piping hot in the centre.

Stir the pasta, chicken, pesto, tomatoes, spinach, and a splash of pasta water together in the baking dish until evenly coated.

Scatter over the mozzarella and bake for 15 to 20 minutes until bubbling at the edges and golden on top.
