Method

Heat the oven to 200C and line a baking tray if needed.

Halve the new potatoes, trim the green beans, chop the parsley, zest the lemon, and cut the cod into 4 portions.

Boil the potatoes in a saucepan for 12 to 15 minutes until tender, adding the green beans for the final 3 minutes.

Mix the breadcrumbs with parsley, lemon zest, olive oil, and a pinch of seasoning.

Put the cod on the baking tray, press the herby crumbs on top, and bake for 10 to 12 minutes until opaque and flaking easily.

Drain the potatoes and beans, squeeze lemon over the fish, and serve everything while hot.
