Method

Heat the oven to 200C and set out a baking tray.

Cut the broccoli into small florets, chop the parsley, zest the lemon, and cut the salmon into 4 portions.

Put the couscous in a heatproof bowl, pour over 280ml boiling water, cover, and leave for 5 minutes before fluffing with a fork.

Toss the broccoli with a little olive oil, spread on the tray, and roast for 8 minutes.

Add the salmon to the tray, scatter over lemon zest and parsley, and roast for 10 to 12 minutes until the fish flakes easily.

Stir lemon juice and the remaining parsley through the couscous, then serve with the salmon and broccoli.
