Method

Halve any larger new potatoes, then simmer them in salted water for 12 to 15 minutes until a knife slides in easily.

Add the eggs to the potato pan for the final 8 minutes and the green beans for the final 3 minutes, then drain everything well.

Cool the eggs under cold water, peel, and halve them, then halve the cherry tomatoes.

Cook the salmon in a non-stick frying pan over a medium heat for 6 to 8 minutes, turning once, until it flakes easily and is piping hot in the centre.

Whisk the lemon juice with the mustard, olive oil, and a small pinch of salt to make a quick dressing.
Divide the potatoes, beans, tomatoes, olives, eggs, and salmon between lunch boxes, then pack the dressing separately if chilling overnight.
