Method

Heat the oven to 190C, then slice the potatoes, carrots, and onion into thin pieces.

Brown the sausages in a wide pan for 6 to 8 minutes until coloured, then lift them onto a board and slice into chunks.

Drain and rinse the butter beans, then layer the potatoes, carrots, onion, butter beans, and sausage in a baking dish.

Pour over the hot vegetable stock, then cover the dish tightly with foil.

Bake for 35 minutes, uncover, and bake for 10 minutes more until the potatoes are tender and golden at the edges.

Rest for 5 minutes before serving so the stock settles into the beans and potatoes.
