Method

Halve the tomatoes, tear the mozzarella into small pieces, roughly chop the basil, and whisk the eggs in a bowl for 30 seconds.

Warm a non-stick frying pan over a medium heat, then add the eggs and stir gently for 3 to 4 minutes until softly scrambled.

Warm the wraps for 30 seconds in a dry pan or microwave so they fold without tearing.

Fold in the sides, roll tightly, and warm seam-side down for 1 minute if you want the mozzarella slightly melted.
