Method

Heat the grill or a dry frying pan to medium-high, then slice the bread into sturdy pieces.

Chop the tomatoes, tear the mozzarella into small pieces, roughly tear the basil, and halve the garlic clove.

Toast the bread for 2 to 3 minutes on each side until golden and crisp at the edges.

Rub one side of each hot toast lightly with the cut side of the garlic.

Toss the tomatoes with the mozzarella, basil, olive oil, and a small pinch of salt.
Spoon the tomato and mozzarella mixture over the warm toast and serve straight away before the toast softens.
