Method

Slice half the cucumber thinly, halve and stone the avocado, and cut the lemon in half.

Mash the avocado with the mustard, a squeeze of lemon juice, and a small pinch of salt until spreadable but still slightly chunky.

Lay out the bread and spread the avocado mixture evenly to the edges to stop the sandwich feeling dry.

Layer the turkey slices and cucumber over half the bread slices so the filling sits evenly.

Close the sandwiches, press gently, and slice in half with a sharp knife.
Pack straight away or chill for up to 30 minutes before eating.
