Method

Finely chop the carrots and celery, crush the garlic, and rinse the red lentils.

Cook the pasta in a saucepan of boiling water for 9 to 11 minutes until tender, then drain.

Fry the turkey mince in a wide pan over a medium-high heat for 7 to 9 minutes until browned with no visible pink patches.

Stir in the carrot, celery, and garlic for 3 to 4 minutes until the vegetables start to soften.

Add the red lentils, passata, and 250ml water, then simmer for 15 to 18 minutes until the lentils are tender and the sauce has thickened.

Toss the sauce through the pasta and serve while hot.
