Method

Heat the oven to 200C. Crush the garlic, then mix it into the turkey mince with a pinch of salt and black pepper.

Roll the mixture into 16 small meatballs, about walnut-sized. Keeping them small helps them cook evenly in the bake.

Heat 1 tbsp oil in a non-stick frying pan over a medium-high heat. Brown the meatballs for 5 to 6 minutes, turning gently; they do not need to be cooked through yet.

Tip the orzo and passata into a baking dish. Stir in 250ml hot water, then nestle the browned meatballs into the sauce.

Bake for 18 to 22 minutes until the orzo is tender, the sauce has thickened, and the meatballs are piping hot in the middle.

Tear over the mozzarella and return to the oven for 3 minutes until melted. Rest for 2 minutes, then spoon into bowls.
