Method

Cook the noodles in a saucepan of boiling water for 4 to 5 minutes, or according to the shortest timing on the pack, until just tender.

Add the edamame for the final 3 minutes, then drain everything and rinse under cold water until fully cooled.

Cut the carrots and cucumber into thin matchsticks so they mix easily through the noodles.

Whisk the soy sauce, lime juice, sesame seeds, and 1 tbsp cold water in a large bowl.

Toss the cooled noodles and edamame with the dressing for 30 seconds, then fold through the carrot and cucumber.
Divide between lunch boxes and chill, then toss again briefly before eating so the dressing coats the noodles.
