Method

Chop the dried apricots into small pieces, roughly chop the almonds, and keep a spoonful of each aside for topping.

Put the oats, milk, cinnamon, and most of the apricots in a saucepan over a medium heat, then stir for 1 minute to combine.

Simmer for 5 to 6 minutes, stirring often, until the oats are creamy and just thick enough to hold their shape.

Stir through most of the almonds for the final 1 minute so they warm without losing all their crunch.

Spoon into bowls, loosen with a splash of milk if needed, and finish with the reserved apricots and almonds.
