  • 800g new potatoes
  • 1 broccoli
  • 200g green beans
  • 250g cherry tomatoes
  • 1 lemon
  • 2 tbsp wholegrain mustard
  • 2 tbsp honey
  • 2 tbsp olive oil

    Prep the tray

    Heat the oven to 200C/180C fan/gas 6. Halve the new potatoes, cut the broccoli into small florets, trim the green beans, halve the cherry tomatoes, and cut the lemon into wedges.

    Parboil the potatoes

    Put the potatoes in a saucepan of salted water, bring to the boil, and simmer for 10 minutes until the edges are just tender. Drain well and leave to steam dry for 2 minutes.

    Tip the potatoes onto a large baking tray with the broccoli and green beans. Toss with 1 tbsp olive oil, salt, and black pepper, then roast for 12 minutes until the potatoes start to turn golden at the edges.

    Whisk the wholegrain mustard, honey, remaining olive oil, the juice from two lemon wedges, and a pinch of black pepper in a small bowl.

    Nestle the salmon fillets and cherry tomatoes among the vegetables. Brush the salmon with the glaze and roast for 10 to 12 minutes until the salmon flakes easily and the vegetables are tender.
