What you need

  • 500g turkey mince
  • 350g courgette
  • 300g jasmine rice
  • 1 onion
  • 3 cloves garlic
  • 2 tsp dried oregano
  • 250g sweetcorn
  • 1 lemon
  • 1 bunch basil
  • 1 tbsp olive oil

  1. Step 1

    Prepare the rice bowls

    Slice the courgette into half-moons, chop the onion, grate the garlic, pick or roughly chop the basil leaves, and boil the kettle.

    Cook the rice

    Rinse the jasmine rice, then simmer with 600ml water for 10 minutes. Leave covered off the heat for 5 minutes. Hold back extra salt and black pepper until the final taste check.

    Cook the base

    Heat olive oil in a wide pan. Cook the onion and courgette for 6 to 7 minutes until softened and lightly coloured.

    Add protein and spice

    Stir in the garlic and dried oregano for 1 minute. Add the turkey mince with a pinch of salt and break it up with a spoon for 7 to 9 minutes until browned with no pink mince visible. Stir in the sweetcorn for the final 2 minutes.

    Season the bowls

    Squeeze over lemon juice, fold through half the basil, and loosen with 2 tbsp water if needed.

    Finish and serve

    Fluff the rice into bowls, spoon the topping over it, and finish with the remaining herbs. Taste once everything is assembled, then add a little salt and black pepper only if needed.
